Recipe collaboration with Hazel_and_cocao
Ingredients:
1 Ruby Rise Red Papaya
2 cups rolled oats
1/2 cup almond butter
1/2 cup maple syrup
1/3 cup coconut flakes
1/3 cup raw almonds
Method:
For the papaya: remove seeds and skin and cut into small cubes. Place evenly on a dehydrator tray and dehydrate at 90 C for 8 hours. This may take longer depending on what dehydrator you have. If you do not have a dehydrator, set the oven to 90 C and bake (fan-forced) until moisture is removed leaving the oven door slightly open while baking (pop a wooden spoon in there). It's best to check on the papaya often to check when it is finished as dehydration times vary.
For granola, add all other ingredients into a large bowl and mix until well combined. Spread out onto a large oven tray and bake in the oven for 15 mins at 180 C. Once baked, mix in papaya and serve on top of yogurt or smoothies.
