Recipe collaboration with The Small Seed
Recipe - Makes 6 Icy Poles
Ingredients
330g of Ruby Rise Papaya when peeled and seeded (half a Papaya)
1 Ripe Banana
Juice and zest of 1 (Very Juicy) Lime
1/3 Cup Coconut Yoghurt
1 tsp pure Vanilla Extract
1/2 Cup pure Maple Syrup
Topping
1/2 Cup Coconut Yoghurt
1/4 tsp pure Vanilla Extract
Drizzle of Maple Syrup
Sprinkle of Granola
Method:
Place all ingredients - except for the topping - into a high speed blender and blend until smooth and creamy
Pour into icy pole moulds and place into freezer overnight
Combine all topping ingredients, except granola, in to a small bowl
Prepare a clean plate, lined with baking paper ready for the icy poles
Dip each icy pole into the topping mix a couple of times, place onto plate and sprinkle some granola on top
Place back into freezer for approx 1 hour until set
Enjoy or keep in an airtight container for later!
