Ruby Rise Red Papaya, Feta, Mint & Dukkah Toasts

Ingredients

  • ½ Ruby Rise Red Papaya, seeds and skin removed, sliced

  • 2 slices sourdough bread

  • 50g greek feta

  • 1 tablespoon dukkah

  • Fresh mint leaves and lime

Dukkah Ingredients

  • ¼ cup pine nuts

  • ¼ cup sunflower seeds

  • 2 tablespoons sesame seeds

  • ½ tablespoon ground cumin

  • 1 tablespoon ground coriander

  • 1 teaspoon nigella seeds (optional but yum)

  • 2 teaspoons sea salt

Toast Method

  • Toast bread to your liking then top with slices of Ruby Rise Red Papaya, feta and a squeeze of lime, followed by mint leaves.

Dukkah Method

  • Place all ingredients in a large fry pan on medium heat and toast 5-8 minutes or until seeds are lightly golden and spices are fragrant. Stir frequently.

  • Once cooked transfer half the mix to a mortar and pestle or a spice grinder and blitz quickly or grind until broken into smaller crumb like pieces. Sprinkle over the toast. Store in an airtight container.
