Ingredients
1 kilo chicken breast fillet, cubed
1 Ruby Rise Red Papaya
3 tbsp olive oil
½ of a flat leaf parsley, finely chopped
3 garlic cloves, crushed
1 tsp salt
1 ½ tsp sumac
¼ tsp chili flakes
½ tsp ground black pepper
1 lime, zest & juice
Method
Cut up chicken breast into approximately 2 cm cubes
Deseed and cut up papaya into cubes about the same size as the chicken cubes
Place chicken and papaya into a large bowl and add remaining ingredients. Toss gently until all chicken and papaya are coated evenly with spices and liquid. Place in the fridge for at least 30 minutes to marinate
Skewer chicken and papaya cubes onto metal skewers, alternate between pieces (2 chicken, 1 papaya, 2 chicken, 1 papaya)
Preheat a grill pan or a barbecue. Once ready to cook skewers turn heat down to medium. Cook Skewers for about 5 minutes per side. Chicken should be golden brown and cooked through
Serve hot
