Recipe - Makes 9 pancakes
Ingredients
210g @rubyrisepapaya after being peeled and seeds removed (you will need extra for pancake topping) - available @ Coles Supermarkets
Zest of 1 1/2 Limes
2 Tbls Lime juice
150ml Almond milk
1 Tsp Pure Vanilla extract
2 Tbls Pure maple syrup
1 1/2 cups Spelt flour
3 Tsp Baking powder
1/4 cup desiccated Coconut
Method
Place roughly chopped Papaya into a blender along with Lime zest/ juice, milk, vanilla extract and maple syrup. Blend until smooth.
In a large bowl combine the flour, baking powder and coconut.
Pour Papaya mixture over the dry ingredients and combine.
Heat a frying pan with a little oil.
Pour mixture into pan Using 1/4 C measures
Cook for Approx. 2-3 mins each side
Once all pancakes have been cooked, stack, and top with Coconut yogurt, papaya and maple syrup!
