Papaya Crumble

Papaya Crumble recipe collaboration with Run 2 Food

Ingredients:

1 cup Ruby Rise papaya, chopped - Available at Coles Supermarkets

*Optional: sprinkle of brown sugar

Crumble topping:

1/4 cup oats

1/4 cup almond meal

1 tablespoon of runny peanut butter

2 tablespoons maple syrup

Pinch of salt

1/2 teaspoon cinnamon

To serve: vanilla ice cream of choice

Method:

1. Preheat the oven to 175 degrees C/350 degrees F. Prepare a small pie ramekin with non-stick spray (my ramekin was 12cm in diameter)

2. Add the chopped papayas to the base of the ramekin. * Optional: you can sprinkle some sugar over the top of the papaya if you prefer it sweeter.

3. In a separate bowl, make the crumble by mixing together the rest of the ingredients until a cookie dough consistency. Sprinkle the crumble over the papayas

4. Bake in the oven for 18-20 minutes until the crumble is golden.

5. Remove from the oven and allow it to cool before serving with a scoop of vanilla ice cream!
