Papaya popsicles in collaboration with Eats With Marie
Ingredients
¼ cup warm water
½ cup caster sugar (or sweetener or choice), divided into 2 batches
1 cup (290g) unsweetened natural greek yoghurt
100g mango*, roughly chopped
300g Ruby Rise Papaya, roughly chopped
Method
1. Combine the water and ¼ cup caster sugar in a medium mixing bowl, until sugar has dissolved.
Add the yoghurt and whisk to combine. Set aside.
2. Place the mango, papaya and remaining sugar in a blender and blend until smooth.
3. Fill 8 x ⅓ cup-capacity (80ml) popsicle moulds ⅓ of the way with the yoghurt mixture, then top
with papaya mixture and then another small layer of the yoghurt mixture. Add a popsicle stick to
each mould, using the stick to gently swirl the layers together. Freeze for 2–3 hours or until
frozen.
4. To serve, run each mould under warm water for 10 seconds to loosen.
* Notes
1. If fresh mangoes are not available, frozen thawed mango may be used.
