Rice paper rolls with papaya dipping sauce
Recipe collaboration with Sunkissed kitchen
For the rolls:
1 cup packet rice paper
1/4 red cabbage, shredded
1 watermelon radish, cut into shapes or shredded
1 carrot, cut into cute shapes or shredded
1 cucumber, sliced thinly
1 small cos lettuce, shredded
1 red capsicum, sliced into strips
Fresh herbs (I used mint and basil)
Finger limes (optional)
Prepare rice paper as per instructions, and layer vegetables inside, with the cute shapes (if you're using them) layered on the rice paper first. Roll up and you're done!
For the dipping sauce:
1 Ruby Rise papaya (you can use fresh, or bake in the oven for 25mins at 180°c for extra flavour - that's what I did)
1 tbsp lime juice
2 dates
1 tbsp macadamia oil
1 clove garlic
1 tsp fresh ginger
1 tsp fresh turmeric
Pinch black pepper
Pinch nutmeg
1/4 cup water
Blend all ingredients in a blender! 💛
