Red Papaya and tempeh salad
Recipe collaboration with Nourish Anushka
Ingredients:
1 /2 Ruby Rise Papaya
60g rocket
220g bocconcini
1 Lebanese cucumber, cut into ribbons with a peeler
Sea salt and pepper
Dressing:
2 tbsp extra virgin olive oil
1 lime, juiced
1 tsp lime zest
2 tsp wholegrain mustard
1 tsp honey
Method: In a small bowl combine olive oil, lime juice, lime zest, wholegrain mustard and honey. Peel papaya, remove seeds and cut into bite sized pieces. Combine with rocket, bocconcini, cucumber. Pour dressing over salad and season with salt and pepper.
