Recipe collaboration with Nourishing Nosh

Ingredients
Muesli:
100g Oats
Juice of 2 oranges (150ml)
50ml water
250g ripe Ruby Rise Papaya
1 passionfruit
100g Coconut yoghurt
20ml Lime Juice
To serve (optional):
½ cup cubed Papaya
2 passionfruit
Handful Blueberries
Handful chopped strawberries
2 tablespoons Pepitas (Pumpkin seeds)
2 tablespoons chopped roasted almonds
Extra dollop of yoghurt
Method:
1. The night before serving, mix the oats, orange juice and water together in a bowl.
2. Stir well, cover. Sit on the bench top overnight.
3. In the morning, grate the papaya into the bowl with the oats. Stir in the passionfruit, yoghurt and lime juice.
4. Prepare the extra fruit if using.
5. Divide muesli between the bowls, top with fruit, a dollop of yoghurt and a sprinkle of seeds and nuts.
