Ingredients:
¼ papaya, peeled and diced
10 mint leaves
1 lime, half juiced and half sliced
60mL vodka (optional)
1 cup dry ginger ale
Ice
Place ice in two tall glasses. Divide the papaya, mint and lime slices between the two glasses. Add an even amount of lime juice and vodka between the glasses, let it sit for 5 minutes for the fruit flavours to infuse, then top up with ginger ale.
