Papaya and avocado salad with grapefruit

Papaya Salad Recipe With Avocado & Grapefruit in collaboration with From My Little Kitchen
 
Ingredients:

1 pkt baby kale leaves

½ papaya, peeled, deseeded and diced

1 avocado, sliced

8 cherry tomatoes, halved

1 grapefruit

3 tbs roasted peanuts, chopped

Coriander to taste

Juice of one lime

1 tsp sesame or olive oil

½ tsp sea salt flakes

¼ tsp cracked black pepper

Pinch of cayenne pepper

Method:

Place baby kale leaves on the bottom of your serving plate. Then add papaya, tomatoes and avocado. Slice skin from the grapefruit and slice out segments, discarding the pith. Add on top. Sprinkle over peanuts and coriander.

Combine lime juice, oil, salt, pepper and cayenne in a small cup and mix. Pour the salad evenly. Let it sit for 5 or minutes before serving as is or with grilled chicken.
