Ingredients
1 ripe Ruby Rise Red Papaya
1 cup (160g) frozen pineapple chunks
½ cup (125ml) coconut milk
30g rolled oats
1 lime, juiced, plus extra to serve
Toasted coconut flakes, to serve
Edible flowers, to garnish (optional)
Method
Prepare the papaya. Halve your Ruby Rise papaya lengthways and scoop out the seeds with a spoon.
Blend the smoothie. Blend the pineapple, coconut milk, oats and lime juice in a blender until smooth.
Serve Spoon the smoothie mix into your Ruby Rise papaya boats, and top with toasted coconut flakes. For that extra tropical feel, garnish with a few edible flower buds.
Tip - If you like your smoothie bowl extra tropical and zesty, squeeze extra lime juice on your Ruby Rise papaya boat before serving!
